Brownie Cookie Ice Cream Sandwiches with Candied Bacon
Ice cream sandwiches are a summertime favorite. Why buy them from the grocery store when you can easily make your own! This recipe is super easy to customize with your own cookie and ice cream preferences. We made brownie cookies with peanut butter chips and candied bacon ‘cause we love the savory combo of bacon, peanut butter and chocolate. We add classic vanilla bean ice cream and more candied bacon to make a sandwich that would be fun to make with the kids this summer. Or serve them up at a BBQ. Enjoy!
1 lb. bacon
¼ cup brown sugar
1 pouch Betty Crocker Hershey’s Ultimate Chocolate Brownie Mix
¼ cup vegetable oil
1 Tbsp. water
2 large eggs
1 cup Reese’s peanut butter chips, or semi-sweet chips
2 Tbsp. reserved bacon grease
Ice cream in your preferred flavor
Candy the bacon. Preheat oven to 400° F. Coat both sides of each strip of bacon with brown sugar and bake until crispy. Allow to cool then chop into bits.
Line a jelly roll pan with parchment paper. In a large bowl mix the brownie mix, vegetable oil, water, eggs and bacon grease together until well blended. Add the peanut butter chips and some of the chopped, candied bacon and mix until incorporated.
Drop 2 tablespoons of batter on the parchment paper. Bake for 15 min and allow to cool. When the cookies are cool, add your preferred flavor of ice cream to a cookie, then top with another cookie. Roll the sides of the sandwich in the candied bacon. Serve and enjoy!
