Mother’s Day is May 13!
What Mother’s Day breakfast would be complete without bacon? But getting bacon, eggs, potatoes and toast anything near warm by the time it is placed before mother, is quite a feat. Make her Avocado toast instead. It’s a thing. Thanks, Millennials!
Spice up this tasty toast, in a nod to Cinco de Mayo, with jalapeno bacon, crumbled on top, and a squeeze of lime and some cilantro. Pow! So easy but so delicious. This salty, smoky and spicy bacon was just the thing to enhance the avocado. This could be an easy and tasty breakfast in bed item for Mother’s Day.
- French bread or ciabatta
- Ripe avocado
- Jalapeno Country Bacon
- Lime juice
- Cilantro (optional)
Cook bacon and cool on paper towel. Roughly chop the bacon once cooled. We used about one slice of bacon for each side of the toast; adjust bacon quantity according to your taste.
Cut avocado in half and crush the peeled avocado until it is spreadable.
Using a slice of French bread about 3 inches long, or a ciabatta, cut the bread in half. Toast the bread then slather the cut sides with the crushed avocado. Sprinkle with the chopped bacon and squeeze lime juice on top.
Garnish with chopped cilantro (optional)
